The idea is to establish a non profit cafe and a place for workshops and events with an overall goal of raising awareness of environmental issues, as food waste and its consequences.The cafe will mainly use surplus products - perfectly good food, which would be otherwise thrown away, or the surplus ingredients that we get from local food producers. The income will be used to support eco-educational workshops.

We want to implement this project as a start of long term, sustainable project, which would permanently change the mind set of general public by offering educational possibilities and lessening environmental impact by reducing food waste and promoting recycling/ second hand/ sharing economy instead of participating in consuming economy.
In general restaurant would work as a almost every regular cafe, where people can come and enjoy their meals. But our place will be cheaper than restaurants in general. The concept is going to be “pay as much as you like ”. If that will not work, we will regulate that to set prices. The price will still be much lower than at a typical restaurant.
The workshops will be organized by us, as well as open for wider audience to offer their workshops, which will be supported by income from cafe. The audience will be able to vote for the best ideas.
The audience we are aiming for, is varied. We are aiming to include all social groups, not solely people interested in environmental issues, but also general audience, who will be attracted by cafe/ restaurant offer, and then introduced to the concept behind.
From other hand, workshops will be dedicated to raise specific environmental issues, as well as to educate on practices which can be implemented on everyday basis.
Even though there are several soup kitchens running in Trondheim, that get their supplies donated from supermarkets, the difference between these kind of places and our proposal would be that it would be run as regular restaurant where everyone can come, not as a soup kitchen or associations, closed places, where only members can come. That would also bring people from different backgrounds together, and rise awareness of ecology and food waste.
